Carrots are a wonderful source of vitamin A; one medium carrot can provide twice the daily recommended value. Low in fat, cholesterol free and low in sodium carrots make for a wonderful snack and healthy addition to meals. Salads can easily be garnished with carrot strips created by pealing clean dry carrots with a potato peeler. If you place the carrot strips in the microwave for 30 seconds with a tablespoon of water you can easily curl the strips for added flair. This is a wonderful way to introduce carrots to young children. To make carrots extra enticing to picky eaters try serving carrot flowers. Run a fork length wise down a peeled carrot and then slice inch slices width wise. The fork will create grooves and give the appearance of flower petals. When buying carrots look for carrots that are bright orange to orange-red in color. The tops should be a rich dark green with no yellowing around the edges. Once home trim the green tops then rinse and drain the carrots and store in a large sealed plastic bag. Carrots will keep in the vegetable drawer of the refrigerator for up to three weeks. Simple methods such as switching to a natural food diet, juicing to increase nutrition, or fasting are used to cleanse the body of stored toxins in the hopes of naturally addressing long-standing symptoms such as chronic headaches, adult acne, allergies or arthritis. The college admissions process can be overwhelming, and because its constantly evolving (and each school uses different criteria for evaluating admissions!), it would be difficult for anyone to master the process. To take some of the guesswork out of admissions, we decided to get the latest on the process from those in the know. Kerry Rosen, Director of Admissions for Harriet L. Wilkes Honors College of Florida Atlantic University, and Susan Hertz, Associate Director, Marketing of American University, shared advice and information for high schoolers preparing to apply to college. What is the most common mistake you see applicants make to hurt their chances of getting accepted into a college or university? ROSEN: They submit late or incomplete applications, or dont check to see what is required, such as how many letters, an essay vs. a graded writing sample, etc. HERTZ: Or they dont check to make sure that all the required parts of the application have actually arrived. What is the approximate weight given to grades, test scores, extracurricular and community activities, essays and recommendations? What other factors do you like to consider? ROSEN: We place a lot of emphasis on the academic record because we offer a very challenging program and we want to be sure that the applicants have what it takes to be successful here. We look at test scores, the strength of the classes taken, grades, and also require a graded writing sample so that we can see the how well the applicant is able to communicate in written form. In addition to academics, we are interested in what the applicant does outside the classroom school and community involvement, employment experience, honors and awards. Letters from teachers, counselors and people in the community tell us a lot about the students character, motivation and level of compassion. HERTZ: This information is found in most guidebooks. At AU, we look at grades in conjunction with the difficulty of the courses selected and test scores; essays and recommendations; and then activities. Can you give us an example of a few applicants whose grades or test scores were below the average for your admitted students but who were admitted for other reasons? ROSEN: We sometimes take a chance on a student with a less than stellar academic record if they have demonstrated an extraordinary level of character or persistence in the face of economic, social or cultural obstacles. Some examples might be a recent immigrant or a student dealing with a very difficult family situation. HERTZ: We look for students who show evidence of leadership. Essays also often explain the circumstances that have caused low grades or test scores. What can/should high school sophomores be focusing on regarding college? ROSEN: Tenth graders should be focusing on learning more about themselves, academically and personally about their interests, about their strengths and weaknesses. They should begin to compile a list of the kinds of things they would like to find in a college. From that list they can come up with a list of colleges that meet the criteria they have set. It seems to me that that way theyd be able to find a better fit between themselves and the school. HERTZ: They should take a challenging course of study and find an activity that he or she can be passionately engaged in. Regarding extracurricular activities in high school, is it better to try a little bit of everything or to excel in one thing? Does it matter what the activity is or is it mainly that they devote meaningful time to it? ROSEN: We prefer to see a couple of activities that the student has really gotten involved with. This is much more impressive than a long list of clubs that someone has joined mostly to be able to list them on college applications and resumes. It is especially impressive when a student has either had a leadership role in a school or community organization or they have demonstrated initiative by actually starting a new club or activity. HERTZ: Excel in one thing. The activity doesnt matter. To what extent is it better to take honors or AP courses even if the grades are lower? For example, what looks better: an A in regular English or a B in AP or honors English? ROSEN: Taking challenging courses is a real benefit. They are great preparation for college work and taking them is worth possibly getting a lower grade. HERTZ: For a competitive university such as AU, better to take AP or honors, definitely. How important is balancei.e. sports, academics, volunteer workin your admissions criteria? ROSEN: We like to see applicants who are involved in things other than academics. But it is not a good thing to be so involved that the academic record suffers for it. We sometimes see this happening when a students job becomes too demanding and does not leave enough time for studying. Students need to be very careful to achieve the right balance. HERTZ: Balance is nice but not a deal breaker, so to speak. We believe that a wide range of types creates a dynamic academic experience. Most of our athletes are also scholars; some academically outstanding students do no sports and minimal volunteering. What are your policies on Early Admissions and Early Action? What trends are you seeing with these? Do students have a better chance of being admitted under these plans? ROSEN: We have a non-binding Early Action deadline of December 15. We do not believe that binding plans are in the best interest of the student. Having an applicant make an irrevocable decision that early in the senior year does not strike me as fair and equitable. Students at age 17 or 18 are still learning too much about themselves and what and where they want to study to make a good choice that early. HERTZ: We do Early Decision only. Typically students have about the same chance of being admitted although this can vary tremendously. Some years they have had a better chance. How has the admissions process changed over the last few years? ROSEN: It has gotten to be a more stressful experience for all concerned. Colleges treat admissions more as a marketing venture. Students and their families are increasing focused on gaining admission to a prestigious and well-known school, sometimes for the wrong reasons. They need to look more closely at finding the best fit for their particular needs. And sometimes this means going to a little-known institution that may serve them better. HERTZ: More applications by more students who are more conscious of financial aid/scholarship considerations. First off, if you’re looking to find a date, you need to stop comparing yourself to other guys. This show isn’t about those guys with Porsches and Ferrari’s, it’s about you. Believing that you can get a date will help you become more confident. If everyday, you think of yourself as a loser, then honestly, you will remain a loser. Actions have to come from you; the will to succeed and strive has to come from your desire. Sitting around and feeling like crap won’t help to your cause, trust me. Now that we have focusing on yourself, and confidence taken care of, most guys start to be very self-conscious about their looks. Let’s face it, not everyone looks like Brad Pitt, and there’s nothing you can do about that it’s all genetics. What you can do, is start changing your habits and push them into tune. There’s no excuse for not keeping yourself in shape either! Now comes the hard part, facing the real world when approaching a girl. You have to break that shy bubble that you’re sitting in. Being silent, and thinking inside your head of all the things you COULD be doing, will not benefit anything. If you’re worried that you come to work everyday, and if you mess up your life will be ruined, then don’t try to find a date or flirt there! There are a lot of social gatherings, clubs, theaters, plays, etc. where there are plenty of women to pick up. You should use this opportunity to experiment. Start talking, and joking around, the most important thing of all: try to have some fun. You will be surprised by all the success, and even if you do say something dumb or silly, there’s no need to worry because you’re not going to be seeing that person everyday anyway. The latest trend in skin care marketing is anti-aging. Many women today are concerned about reversing the signs of aging as well as prevention of the aging process. How to Grow Beetroots!

By Terry Blackburn Growing Beetroots Beetroots give salads colour, texture and bite; they can be preserved in vinegar and used as an accompaniment to dishes such as Hotpot or Hash, or cooked in main course meals.There are two types, the round, which are sown a little earlier, and the longer varieties, which are known as the main beet crop. Soil Preparation Beetroots do best in light, sandy loam but will do well in other types of soil if they are first prepared to make them lighter. In clay soil dig the plot over the previous autumn adding plenty of manure at a rate of a bucketful to the yard. Let it stand rough so that the winter frosts and winds can break down the soil making it much easier to rake over the following season. In soils that are lighter add plenty of compost in autumn; root crops should not be fertilized the same season as they are planted. Just before sowing, add bone meal or fish manure with 6 per cent potash content at 4 oz. (120g) to the sq. yd. and rake in lightly. Sowing For the round or globe types, sow the seeds in rows 1 ft. (30cm) apart by 1 in. (25mm) deep; the longer varieties need a little more space, about 1 ft. (45cm) apart. After sowing, cover the seeds by using the back of a rake and firm over. Globe varieties can be sown about the middle of April for the first sowing, the second in the middle of May and the third sowing during July. The last sowing will be ready to harvest just as autumn approaches when the tasty, young, tender roots are at their best. The longer types are sown in June and are left in the soil until they are fully mature before they are harvested. General Care Thin out the seedlings when the shoots are about 1 in. (38mm) high to give space so that the roots will have about 8 in. (203mm) between each plant and will have room to fully develop. At this stage the beetroots that are pulled out will be just big enough to make a tasty dish so they will not be wasted. Keep the area clear of weeds the aid of a Dutch hoe. Harvesting The early crops can be pulled up as soon as they reach a suitable size, while the later crop are generally lifted in November and can be stored in a frost proof shed until they are required. Are You Obese? What’s Your Ideal Weight?

By Raymond Burton Are you obese? A lot of people wonder because the stereotypes in the media really get people thinking about their appearance and if they are fat or at their ideal weight. The general definition of obesity is if you are 30 percent over your ideal weight. This is where most people would like to know just what their ideal weight is of course. Your ideal weight is a subject of much hoopla to me (I’ll put my view points on this after). Most doctors involved with obesity or weight loss deem ideal weight as ” A body mass index (BMI) of 25 up to 30 kg/m2.” The centers for disease control and prevention list the following details for BMI and will let you see where your stand according to them: Below 18.5 Under weight 18.5 24.9 Normal 25.0 29.9 Over weight 30.0 and Above Obese So in order to know if you are obese you should supposedly know if your BMI is around 25 to 30 kg/m2. Lets figure out BMI then. Here is how you figure out your BMI by math:BMI = (Your weight in pounds divided by (Height in inches by Height in inches) all multiplied by 703 Do you have it done? Good! So where did you end up? Are you obese? Are you starting to freak out a little? Okay, lets break for a second. Take a breath and let me tell you the low down. I am a personal trainer; you can see pictures of what kind of shape I am in on the website. I am five foot nine inches and 182 pounds. I am usually around 10-14% body fat. I have a BMI of 26.9! According to all the doctors and some fitness experts out there, I guess I must be overweight and close to obese! So what’s the deal then? Well like I said earlier, I have a little beef with BMI and obesity, as most people would quantify it. I think being over weight or obese should be gauged by your body fat percentage and not this ridiculous BMI. Let me explain why. Well normal BMI readings are taking into account your whole body, bones, muscle, and fat. So even if you have barely any fat and can see your abs they think you are obese and not at your ideal weight, just like me. If you have a lot of muscle and little fat, you can still fail the BMI even if you are healthy and fit. Now body fat percentage tests are a different story. The only thing looked at here is how much fat and muscle you have by percentages of your overall body weight. Obesity this way states that above 25% body fat for men is obese and above 32% body fat is obese for women. If you come in on or around these figures, then you should get to work and apply some solid training and nutrition planning basics. Doing an actual body fat test will truly tell you where you are and where you should be because it is the fat amount and not the overall weight of a person that has detrimental health consequences. You can get a body fat test done at any local gym or you can buy a cheap tester that will put you in the ballpark figure. Just make sure that you keep using the same method all the time, as you want to compare the change and not the actual figure. One method may differ from the other by as much as 3%. Small but still important if you are gauging all your hard work!
